The boquerón, also known as anchovy or bocarte, belongs to the Engraulidae family. Like its salted counterpart, it is a migratory fish that travels thousands of kilometres throughout its life in search of nourishment.

Unlike cured anchovies, boquerones are prepared fresh. Each fillet is hand-trimmed one by one, then carefully marinated in white wine vinegar until reaching optimal balance. They are finally packed in olive oil with garlic and parsley, preserving their brightness and delicate character.

This artisanal process gives them their unmistakable identity.
