Don Alfonso Sánchez opened his first ham and sausage shop when he was barely 20. Forty years later he created Tributo, the line that gathers everything he has learned about Ibérico. He selects the pigs personally, and production is limited to a set number of animals a year. Each whole Tributo ham carries its piece number, written by hand.
The legs cure for 36 to 48 months in the Don Alfonso cellar, at mild, stable temperatures, and he checks their progress day by day. Then they are carved by knife into this pack. Expect deep red meat threaded with white, fat that turns clear and glossy as it warms, and a long, faintly sweet finish with a hint of hazelnut.
Serve & share
Open the pack 20 to 30 minutes before serving and let it reach room temperature. It is a thoughtful gift for Sinterklaas or Christmas, alongside a bottle of fino and a good Spanish olive oil.
