Boquerones are the same anchovy that Ortiz uses for its salted fillets, but prepared in a different way. The fillets are prepared by hand and marinated in white wine vinegar. When the marinade is right, they are packed in oil with garlic and parsley.
The result is a white, delicate fillet with the fresh acidity of the vinegar, very different from the deep, salty taste of cured anchovies. In Spain they are a classic tapa, eaten cold with a glass of beer or wine.
