Description

Ortiz Sardinas a la Antigua: sardines lightly fried in olive oil and packed by hand, one by one, in a glass jar.

At a glance

  • Species: European sardine (Sardina pilchardus)
  • Catch: August to November, purse seine, preferably at dawn
  • Producer: Conservas Ortiz, Ondarroa (Basque Country)
  • Method: cleaned by hand, lightly fried in olive oil, packed by hand
  • Net weight: 190 g (140 g drained), glass jar
  • Allergens: FISH

Ortiz catches its sardines between August and November with purse seine nets, preferably at dawn. The fish are cleaned by hand, one by one, lightly fried in olive oil and then packed carefully by hand, following the old 'a la antigua' method.

The light frying gives these sardines their own flavour, different from sardines that are simply cooked in the tin. According to Ortiz, sardines improve in flavour and quality with time, becoming more tender and delicate.
