Description

Bonito del Norte from Conservas Ortiz: albacore tuna caught with rod and line, one fish at a time, prepared by hand and packed in olive oil.

At a glance

  • Species: albacore tuna (Thunnus alalunga)
  • Catch: Cantabrian Sea, July to October ('costera'), rod and line, one by one
  • Producer: Conservas Ortiz, Ondarroa (Basque Country)
  • Method: prepared by hand, packed in olive oil
  • Format: 112 g oval tin (82 g drained)
  • Allergens: FISH

Bonito del Norte, also called white tuna or albacore, is caught by the Basque fleet during the summer 'costera', from July to October. Ortiz only uses bonito caught with rod and line, one fish at a time, using live bait or trolling. The fish is then prepared by hand and packed in olive oil, in tins and in glass jars.

Ortiz calls Bonito del Norte the most prized tuna for its texture and flavour. The olive oil makes the pale flesh soft and moist. According to Ortiz, it gets better with time: a bonito that has matured for a year in the tin or jar is better than a fresh one.
