Bonito del Norte 'al natural' from Conservas Ortiz: albacore tuna packed raw in a glass jar and cooked in its own juice, with only water and a pinch of salt.

Ortiz catches its Bonito del Norte with rod and line, one fish at a time, during the summer 'costera'. For this 'al natural' version the fish is prepared by hand and placed in the glass jar before cooking. It is then cooked in its own juice, with only water and a little salt added.

Without oil, the taste of the fish itself comes first. Ortiz says it keeps the true flavour of the sea. It is a good choice when you want to add your own dressing or use the tuna in cooking.

Made in Spain by Conservas Ortiz, Ondarroa (Vizcaya). The company was founded in 1891 in Ondarroa by Bernardo Ortiz de Zárate, who began by making white tuna in escabeche; it has been run by five generations of the Ortiz family. Sold in the Netherlands by PuraSangre V.O.F., Lelystad.
