The Bonito del Norte (Thunnus alalunga) — the most prized tuna species in Spanish gastronomy — is renowned for its delicate texture and refined taste. Recognisable by its long central fin, which can reach up to two-thirds of its body length, it is traditionally line-caught one by one during the seasonal “costera”.
Each fish is carefully hand-prepared and placed raw into glass jars before cooking, preserving structure and natural juiciness.
This natural version contains only Bonito del Norte and a pinch of salt — nothing more.
