The Bonito del Norte (Thunnus alalunga) — also known as albacore tuna — is the most prized tuna species in Spanish gastronomy, renowned for its superior texture and elegant flavour.

Recognisable by its long central fin, which can reach up to two-thirds of its body length, this species ranges from 30 cm to 1 metre in size.

Each fish is individually line-caught during the seasonal campaign, ensuring selective and environmentally respectful harvesting. It is then carefully prepared entirely by hand and packed in organic extra virgin olive oil from certified organic agriculture, endorsed by the corresponding official control body.
