The Bonito del Norte (Thunnus alalunga), also known as albacore tuna, is the most prized tuna species in Spanish gastronomy. Recognisable by its long central fin — which can reach up to two-thirds of its body length — it is celebrated for its delicate flesh and superior texture.
Caught one by one using traditional rod-and-line methods during the “costera” season, each fish is handled with care to preserve quality. It is then prepared entirely by hand and packed in olive oil, either in tins or glass jars.
Like fine wine or cured ham, Bonito del Norte can be aged in a conservas pantry, developing even greater depth and smoothness over time.
