The anchovy is a true traveler of the sea, migrating thousands of kilometres throughout its life in search of nourishment. When it reaches the cold, nutrient-rich waters of the Cantabrian Sea, it develops exceptional quality and structure.

The Cantabrian anchovy, regarded as the finest in the world, is matured for a minimum of six months. Once it reaches its optimal curing point, each fillet is hand-trimmed one by one and carefully packed in olive oil — preserving both purity and intensity.
